Palo Santo means holy wood. It grows in the dry forests of
Peru and Ecuador, and for centuries it has been burned as a gesture
of cleansing. Its scent is resinous, citrusy and warm, with a hint
of pine and mint. Here it becomes a cordial and the voice of the
whole glass, set against agave and pink grapefruit. A Paloma that
smells like a ritual.

Profile
A Paloma with a sacred accent. Tequila blanco brings clean agave,
pink grapefruit adds a bitter, juicy lift, and a house-made Palo
Santo cordial lays resinous, woody warmth underneath. A rim of
Himalayan salt adds a mineral crunch, lime sharpens the edge and a
soda top keeps it long and bright. The glass is smoked before it is
poured.
